Minced Meat Steamed Egg (Three-Coloured Eggs)

Because of the pungent smell of century egg, we were curious about the taste of steaming and mixing of the salted egg, century egg and chicken egg. The thought of it seems weird. So, we followed very closely the steps of this minced meat steamed egg (three-coloured eggs) recipe. To our pleasant surprised, the texture was like tofu and the palate was flavorful.

Ingredients

4 salted egg yolk
1 salted egg white
1 century egg
2 eggs
150g minced chicken
1/8 teaspoon fish sauce
dashes of pepper
200ml water

Instructions

1. Cut the salted egg yolk into small pieces.
2. Cut the century egg into smaller pieces.
3. Beat the salted egg white and eggs. Add in fish sauce and pepper and water.
4. Lay the minced chicken on a plate, pour in the beaten eggs with water. Lay the century eggs on top of it.
5. Steam it for 20 minutes or till cook.
6. Garnish with spring onion and fried shallot. (optional)
7. Serve
