Double boiled method is usually used to prepare food like bird nest. But, this time, we use double boiled method to cook chicken soup with scallop, which has certainly made the soup taste richer.

Ingredients
- 400g chicken leg (without skin)
- 2 pcs dried scallop
- 400ml water
- 2 pcs radix ligustic wallichii
- 7 pcs red dates
- 1/8 soya sauce
- 2 teaspoon wolfberries
Instructions
- 1. Blanch the chicken with hot water.
- 2. Pour water into the double boiled pot.
- 3. Add in chicken leg, scallop, red dates and radix ligustic wallichii.
- 4. Double boil the chicken for approximate 2 hours.
- 5. Stir-in soya sauce.
- 6. Add in wolfberries before serve.
