How to cook black chicken soup? Fearing of the unknown taste and texture of the chicken has all along prevented me from cooking it. Then, when our contributor, shared with me his double boiled black chicken with American ginseng soup recipe, I decided to give it a try. No regrets. It is really yummy!!!

Instead of using American ginseng, you can also use cultivated woodsgrown ginseng (7 years) in this recipe, it taste equally good.

Ingredients

700ml water
1 black chicken (unskinned)
3g cordyceps flowers (虫草花)
10g wolfberry
8pcs red dates
5g American ginseng

Instructions

1. Rinse the chicken with a little salt.
2. Soak the cordyceps flowers, wolfberry, red dates and American ginseng with 200ml water for 15 minutes.
3. Place chicken into 500ml water, pour all the soaked ingredients onto the chicken.
4. Double boiled it with small flame for at least 120 minutes.
5. Serve.
