Claypot Chicken Rice Recipe

Our contributor has selective ingredients for this claypot chicken rice recipe. So do take note that when you buy sausage, remember to buy sausage with red string (see photo). Also, for salted fish, remember to buy dried threadfin fish.

Ingredients

2 pcs chinese sausages
50g dried threadfin fish
1 tablespoon oil
200g chicken breast / thigh
20g ginger + 1 tablespoon water
3 teaspoon oyster sauce
½ teaspoon black soya sauce
dashes of pepper
2 teaspoon sesame oil
½ teaspoon corn flour
1 teaspoon chinese cooking wine
¼ teaspoon sugar
2g chicken cubes (Knor brand) + 2 teaspoon water
400g rice + 500ml water

Instructions

1. Take out the sausage skin, wash and thinly slice the sausage.
2. Wash and cut the chicken breast / thigh.
3. Rinse and cut the threadfin fish.
4. Flatten the ginger and squeeze out the juice.
5. Season the chicken breast / thigh with oyster sauce, black soya sauce, pepper, sesame oil, corn flour, chinese cooking wine, sugar, chicken cubes water and ginger juice.
6. Heat up 1 tablespoon oil with low flame and pan fry dried fish. Set aside.
7. Rinse the rice and put into the claypot.
8. Turn on small fire to cook the claypot rice.
9. When rice water is boiling in the claypot, add in chicken and sausage. Cover the claypot and continue to cook till aroma.
10. Garnish with spring onions and fried fish. Pour round the pot of rice with more black sauce if you prefer.
