Ingredients

1 whole chicken (@1.3kg)
40g young ginger
30g garlic
3500ml water
1 tablespoon salt
1 teaspoon mushroom seasoning

Instructions

1. Cut away the sharp part of the wing and clean out the inner organs.
2. Rinse the chicken with salt. Drain the water.
3. Smashed the young ginger and garlic.
4. Rub the whole outer and inner chicken with salt.
5. Insert the smashed ginger and garlic into the chicken.
6. Heat up the water and slowly put the chicken into the boiling water.
7. Turn over the chicken after 20 minutes of cooking on one side of the chicken. Let it boil for another 20 minutes on the other side of the chicken.
8. Cover the pot and let the chicken submerge in the soup for about 10 minutes.
9. Take out the chicken and let it cool down before chopping into smaller pieces.
10. You can eat the chicken as it is or you stir-fry it.
11. For the chicken stock, let it cool down and you can use it as steamboat soup or cook chicken rice or soup, noodle or even freeze it for later usage.
