Authentic Laksa Recipe

Instructions

• 1. Rinse the dried prawns and drain away the water. Blend it.
• 2. Rinse the laksa leaves and air dry it. (Use a kitchen towel to tap dry it, if possible)
• 3. Stir-fry the wet chilli and blended dried prawns. Set aside the chilli dried prawns paste.
• 4. Heat up water in a pot, cook the bean sprout till semi cooked, scooped it out. Set aside.
• 5. Use the same pot of water to cook the prawns. Scooped it out, set aside till the prawns cool down, remove the shell.
• 6. Use the same pot of water, add in lemon grass, blue ginger and chilli dried prawns paste. Let it boil for about 15 minutes.
• 7. Prepare to cut the eggs, tao pok, fish cake, prawns and laksa leaves.
• 8. When water starts boiling, add in tao pok and fish sauce. Continue to let it boil till tao pok soften.
• 9. Once done with the cooking, add in coconut milk.
• 10. When serving, remember the procedure is to use a clean bowl to scald the noodle, fish cake, prawns, mix it and pour gravy back into pot twice.
• 11. Scoop the gravy again and garnish it with eggs and laksa leaves.
