Ingredients

1kg water chestnut (with skin)
60g pandan leaves
2000ml water
100g rock sugar
4 eggs white

Instructions

1. Soak, scrub and rinse at least four times or till clean to clear away the soil.
2. Cut away water chestnut skin. (Keep chestnut skin for later use)
3. Cut chestnut into small cubes. Put aside in the fridge.
4. Bring water and pandan leaves to boil for about ten minutes or till pandan flavor aroma.
5. Take out the pandan leaves and add rock sugar, stir till melt.
6. Off the fire and pour eggs white into the water. Use a chopstick to swirl the eggs and cover the pot for a minute.
7. Serve the water chestnut dessert either cold or hot.
