Ingredients

400g muscle meat
250g chicken breast
2500ml water
150g rice + 2.5ml salt + 2.5ml oil + 1 cup water
1 ½ teaspoon fish sauce
½ teaspoon sesame oil
cut spring onion
cut parsley
fried shallots

Instructions

1. Wash the muscle meat with a little salt water. Cut into smaller pieces.
2. Season the chicken with a little salt. Slit the chicken.
3. Heat up 2000ml water with the muscle meat for 30 minutes.
4. Soak rice with water, salt and oil for 30 minutes.
5. After boiling the muscle meat for 15 minutes, add in another 500ml water and chicken breast and let it boil together for 7 minutes (do not boil too long – otherwise the chicken will be too tough.)
6. Use a chopstick to test whether the chicken is cooked or not by poking it. If it can go through the meat, it is done and ready to take it out.
7. Let the chicken cool down and shred it into little pieces.
8. Pour in the rice and stir it with medium flame so that it will not stick together. Once it starts to boil, lower the flame. Continue to cook for 45 minutes.
9. Add in shredded chicken, fish sauce and sesame oil and continue to cook for 5 – 10 minutes.
10. Garnish with spring onion, parsley and fried shallots.
