Pig Trotters Vinegar Recipe

According to our contributor, pig trotters gravy can be re-cook for a month. During confinement, just continue to add-on the eggs or meat in the slow cooker. With this pig trotters vinegar recipe on hand, it is easy for any helper to cook. It is a great confinement food for recuperation.

Ingredients

1300g pig leg (must buy the front leg)
200g big muscle meat
500g ginger
750ml black sweet rice vinegar
2 tablespoon sesame oil
3 tablespoon oil
1300ml water
4 tablespoon brown sugar
2 tablespoon coarse raw sugar
Eggs up to your preference

Instructions

1. Boil the eggs and crack the shell. Set aside.
2. Use a spoon to clear away the dirt of the ginger. Rinse and air-dry the ginger.
3. Use a mini hammer to smash the ginger. Set aside.
4. Wash the pig leg with salt and make sure to remove all remaining hair on the leg.
5. Blanch the meat and pig leg with hot water. Set aside.
6. Heat up oil and sesame oil in the wok. Stir fry ginger till aroma.
7. Scoop out the ginger. Set aside.
8. Add in all the meat and stir fry evenly.
9. Pour in the black vinegar and water. Increase the flame till it boiled.
10. Add in brown and raw sugar. Stir well.
11. Put ginger, then eggs into the slow cooker.
12. Transfer the black vinegar gravy and meat into slow cooker and simmer it for at least one hour.
