Marble Cake Recipe

If you do not have cocoa powder, you can use milo powder for this recipe.  But, remember to reduce the sugar if you do not want it to be too sweet.

It is highly advisable to use an electric mixer to prevent the cake from being lumpy.

If your cake burnt easily, cover the top of the cake pan with aluminum foil.

Ingredients

  • 300g melted butter (do not throw the packaging of the butter)
  • 200g sugar
  • 6 eggs (60g) or 7 eggs if is smaller than 60g
  • 2 tablespoons sieved cocoa powder
  • 220g sieved self-raising flour
  • ½ teaspoon lemon juice

Instructions

  • 1. Mix the butter and sugar till it become whitish (use low speed all the way).
  • 2. Add eggs and sieved flour alternating gradually. Continue to mix till it is smooth.
  • 3. Scoop out about 8 tablespoons of butter mixture and mix with cocoa and stir it and set aside.
  • 4. For the remaining butter mixture, pour in lemon juice and mix well.
  • 5. Grease the 8” round cake pan using leftover butter on the paper packaging of butter.
  • 6. Put the empty pan into the oven to heat it up at 180 degree for about 1 minute.
  • 7. Take out the heated pan and alternate between pouring the butter mixture and the cocoa mixture. Use a satay stick to swirl the cocoa mixture around so that it will be evenly spread out.
  • 8. Bake the cake at 180 degree C for 50 minutes and use a toothpick to poke the cake to check if the cake is thoroughly baked. ( toothpick should appear clean – without any cake or mixture stuck on it).
  • 9. Let the cake cool for 10 minutes in the pan. Flip it onto a wire rack. Allow cake to cool completely. Cut and serve.
