Korean Sweet Potato Noodles Recipe

Easy and speedy way of cooking Korean sweet potato noodles recipe is disclosed. Chapchae, which is a popular noodle among the Koreans, can be served hot or cold.

Ingredients

250g sweet potato noodle
100g thinly cut carrot
30g dried mushrooms
70g cut spring onion
½ cup of Korean BBQ sauce bulgogi marinade
2 teaspoons sesame oil
1 teaspoon chopped garlic
½ cup water

Instructions

1. Soak the dried mushroom in a bowl of water for 10 minutes.
2. Chop the garlic, cut the carrot, spring onion and soaked mushrooms.
3. Soak the noodle in hot water till soften. Drain away the water and rinse it with cold water.
4. Pour 1 teaspoon of oil into the frying pan to heat up the pan.
5. Stir-fry garlic till slightly brown, add carrot and mushrooms. Stir-fry for about 2 minutes. Scoop it out and set aside.
6. Pour 1 tablespoon oil into the frying pan, add in the noodle and BBQ sauce into noodles, stir fry till evenly coated.
7. Add in cooked carrots and mushrooms, spring onions and water. Mix it evenly.
8. Add in sesame oil and stir-fry it till uniform.
9. Serve while is hot.
