Ingredients

  • 150g chestnut
  • 1/2 chicken (cut/chopped)
  • 60g soaked dried lily flower
  • 100g soaked black fungus
  • 25g sliced ginger
  • 10pcs red dates
  • 20g soaked mushrooms – sliced (keep the mushroom water @ 200ml water)
  • 2 tablespoon oil
  • 2 tablespoon oyster sauce
  • 2 tablespoon sesame oil
  • 1 tablespoon soya sauce
  • A few dashes of pepper
  • 1 teaspoon corn flour
  • 1 teaspoon mirin

Instructions

  • 1. Marinate chicken with oyster sauce, sesame oil, soya sauce, pepper and corn flour for 30 minutes.
  • 2. Heat up oil and stir fry ginger till brown in medium fire.
  • 3. Put in dried lily flower, stir fry for a few seconds.
  • 4. Add chicken and stir fry for a minute.
  • 5. Put in black fungus and red dates and mushrooms, stir fry for a few seconds.
  • 6. Add in mushrooms water.
  • 7. Add in chestnut and stir it.
  • 8. Transfer to a pot and continue to let it simmer for about 20 minutes in slow fire.
  • 9. Add in mirin.
  • 10. Serve.
