Cabbage Vegetable – Hainanese Style Recipe

This is, apparently, Hainanese style of cooking cabbage. The cabbage has a mix taste of salty and sweet. Either Cameron or Taiwan cabbage is preferred. Beijing cabbage is not so sweet and harder to cook.

Ingredients

25g dried shrimps
2 tablespoon oil
1 pc carrot, sliced
200g Cameron or Taiwan cabbage
30g soaked mushroom
50g soaked black fungus
100g soaked bean stick
1 bunch of soaked vermicelli
700ml water
2 tablespoon soy sauce
1 tablespoon black sauce

Instructions

1. Fry the dried shrimps till aroma.
2. Add in carrot and cabbage, stir fry for 2 minutes.
3. Add in mushroom, black fungus, bean stick, 400ml water, soy sauce and stir fry for a while, cover the wok to simmer for 5 minutes.
4. Put in vermicelli, black sauce and stir fry for 2 minutes.
5. Transfer to a pot, add in the remaining water. Cover pot, lower fire and simmer for 10 minutes.
6. Ready to serve.
